Halloween is the perfect time to bring these Spinach Banana Muffins to life!
These muffins are so fun, festive, and nutritious. Kids of all ages, babies and toddlers love them and eat them all up. Packed with so much goodness in one single bite, made with no added sugar, refined sugar-free, sweetened with only bananas! They come out so soft, airy, moist, making them an excellent choice for babies, especially those practicing baby-led weaning (BLW). Cut the muffin into small pieces with some yogurt and berries, giving you an easy, healthy, wholesome snack option for babies & toddlers. Great for meal-prepping, freezer-friendly, after school snack or lunchboxes!
The bright green color makes them a festive option for Halloween or serve it as a snack or healthy dessert. These are perfect for picky eaters, getting some extra veggies into their diet in a fun, tasty way. Have your little ones name them with you, my daughter likes to call them Zombie muffins, but I've heard of hulk muffins, frog muffins, monster muffins or even fairy muffins! They are so easy to make and versatile, these muffins will become a favorite for both parents and kids, not just for Halloween but all year round.
Benefits of Spinach Banana Muffins:
These muffins are not only festive but also packed with essential nutrients. The blend of spinach and bananas provides a combination of vitamins, minerals, fiber, and natural sugars, making this recipe a healthier option than standard sugary Halloween treats.
Spinach- A green leafy vegetable loaded with vitamins and minerals like
vitamin K,
vitamin A, and
iron. Vitamin K supports bone health, vitamin A is great for vision and immune function, and iron, which is an essential nutrient for babies and toddlers.
Bananas- A great addition to kid-friendly recipes because they’re naturally sweet, eliminating the need for refined sugars. They’re also high in
potassium, which is crucial for heart and muscle health. Bananas offer a good amount of fiber, which aids digestion.
Oats- Rich in
soluble fiber, especially beta-glucan, which aids digestion by promoting the growth of healthy gut bacteria. They’re also rich in minerals such as
iron, magnesium, zinc, fiber and B Vitamins.
How to Serve:
For 9 month baby: Can add smushed blueberries and serve in bite size pieces, along with yogurt and berries.
For 12 months & up: Can top with blueberries, chocolate chips or sprinkles.
Substitutions:
Bananas: The bananas give most of the flavor in this recipe, you can substitute with applesauce but I do recommend adding a little maple syrup to sweeten it up
Spinach: Can be substituted with kale
Eggs: Can be substituted with flax eggs- 1 tbsp of flax with 3 tbsp of water and let sit for 15 minutes
Non-dairy milk: You can use whichever non-dairy milk you prefer, for example almond milk, oat milk, pea milk, soy milk, etc. Or cow milk works fine too.
Oats: I don't recommend substituting the oats in this recipe
Oil: You can use any neutral oil, coconut oil or melted butter
White whole wheat flour: Can be substituted with whole wheat flour, all-purpose flour, spelt flour or gluten-free flour
