Ingredients & Substitutions:

Oats- I used rolled oats, you can use instant as well. I don’t recommend replacing the oats in this recipe.

Banana- You can substitute with another sweet fruit like apple puree or pear.

Spinach- I used fresh spinach, if using frozen I recommend using a little less than 1/2 cup since spinach shrinks a lot when freezing. You can replace the spinach with another leafy green like kale.

Egg- To replace egg you can use a flax egg. Put 1 tbsp ground flaxseed in small bowl with 3 tbsp of water, mix and let it sit for 10-15 minutes.

Avocado Oil- This can be substituted with any neutral oil or coconut oil.

Non-Dairy Milk- In this recipe I used almond milk. You can use cow milk, soy milk, oat milk, any milk of choice will work.

Directions

  1. Add all ingredients to a blender- oats, banana, spinach, egg, oil, milk, baking powder and blend till smooth
  1. Spray or brush waffle maker with a little oil and add batter
  1. Cook for 3-4 minutes till ready
  1. Serve along side fruit and yogurt & enjoy!
