Spinach Cottage Cheese Muffins

Today I’m sharing one of my go-to favorite recipes that the whole entire family enjoys, made with minimal ingredients, a quick baking time and extremely easy to whip up! These Spinach Cottage Cheese Muffins are a great meal-prep food, always good to have in the freezer and can be easily served as a snack, for breakfast, lunch or added cold to a school lunchbox. Spinach cottage cheese muffins are a simple, healthy, and kid-friendly snack that combines nutritious ingredients in a tasty way, packed with the goodness of spinach, rich in vitamins, minerals, and cottage cheese, which provides a boost of protein and calcium. If you are looking for soft, yummy foods to transition baby from purees, or for baby-led weaning, these are perfect . They are light, fluffy and a great way to sneak some veggies in. I promise these muffins will be a hit every time!

Spinach is rich in iron, calcium, and vitamins A and C, which help strengthen bones, boost the immune system, and support healthy vision. The mild flavor of spinach blends well in muffins, making it easy to sneak in extra greens without kids noticing. Cottage cheese provides a great source of protein and calcium, essential for muscle growth and bone health.

These muffins are also soft and easy to eat, making them excellent for little hands and developing teeth. They provide a balanced mix of proteins, healthy fats, and fiber, keeping kids full and energized throughout the day. Plus, they’re portable and can be enjoyed as a quick breakfast, snack, or lunchbox addition, making them a practical option for busy parents and growing children alike.

 

Substitutions:

For eggs: You can use egg replacement like Just Eggs or flax eggs

For flour: You can use any flour of choice whole wheat, spelt, gluten-free, etc.

For spinach: If you don’t want to use spinach you can omit

For cottage cheese: You can replace with ricotta cheese or farmers cheese

Ingredients

Adjust Servings
1 cup cottage cheese
1/3 cup shredded cheese I used mozzarella
2 eggs
1/4 cup all-purpose flour
1/2 tsp baking powder
1 cup fresh chopped spinach

Directions

Chop spinach and set to the side
Mark as complete

To mixing bowl add cottage cheese, shredded cheese, eggs, spinach and mix together
Mark as complete

Add flour, baking powder and mix
Mark as complete

Spray with oil or line muffin tin and add mixture
Mark as complete

Bake on 350F for 18-20 min
Mark as complete

Cool & Enjoy!

Notes

Storage instructions- can refrigerate for up to 3 days or freeze for up to 1 month

    Hello, just wana check, is 1 cup of cottage cheese too high in sodium for the little one to take? I tried making these today and it’s a bit salty to taste. Don’t get me wrong, I do like your other recipes. 😊
