This simple baby breakfast idea are made with 5 healthy ingredients and all in all take about 10-15 min to prepare. These pancakes are made by blending oats and fresh spinach with egg, a ripe banana to create a smooth, green batter. Cooked in mini, baby-friendly sizes that are perfect for little hands to grasp and explore.
The oats provide essential whole grains and fiber, supporting digestive health, while the spinach adds a boost of vitamins A, C, and K, as well as iron and calcium. TIP:
I like to put the leftover pancakes straight in the freezer once cooled and heat up for about 30 seconds in the microwave before serving. This is an excellent, quick meal-prep recipe. Best served with a little fruit, fruit puree or a side of yogurt, YUM!
Substitutions:
Oats: I used rolled oats, you can use instant oats as well
Banana: Try swapping with another sweet fruit like apple or pear
Egg: Substitute with 1 flax egg- create by adding 1 tbsp flaxseeds with 3 tbsp of water and let it sit for 15 minutes
Spinach: You can substitute with kale
