Spinach Tomato Cottage Cheese Egg Bites

If you are looking for easy, healthy breakfasts, lunches or after school snacks that you can meal prep and have in your freezer ready to go, these are the perfect recipe for that! Spinach Tomato Cottage Cheese Egg Bites are a nutritious and delicious meal option perfect for babies and toddlers. These bite-sized portions are made with only 4 ingredients, by combining fresh spinach, juicy tomatoes, creamy cottage cheese, and eggs, creating a protein-packed, vitamin-rich dish that supports healthy growth and development.

The ingredients are mixed together and poured into muffin tins, then baked until they are set and lightly golden. I personally love these egg bites myself, they are kid-friendly, but great for adults as well. You can add any of your favorite veggies, it will still come out delicious. There has been so many mornings where I am in a rush, trying to get my daughter ready for school and my 1 year old is hungry, I just heat these up for both of them from the freezer, making my mornings so much easier.

The spinach provides essential vitamins like A, C, and K, while tomatoes add antioxidants and vitamin C. Cottage cheese offers a good source of calcium and protein, and eggs contribute additional protein and healthy fats. These egg bites are soft and easy for little hands to grasp, making them ideal for encouraging self-feeding. They can be served warm or cold, making them a convenient and versatile option for breakfast, lunch, or a nutritious snack. What you need:

I make these in the mini muffin tin and it comes out 23 muffins, but you can make them in a bigger muffin tin and will get around 11-12 muffins

 

Substitutions:

Eggs: I don’t recommend substituting the eggs in this recipe

Cottage cheese: Can be replaced with ricotta cheese or farmers cheese

Spinach: Can be replaced with any leafy greens, like kale

Tomato: Can omit if you prefer

Ingredients

3 eggs
3/4 cup cottage cheese
1 skinless tomato
Handful of spinach leaves

Directions

Cut tomato and spinach
Mark as complete

To a bowl add eggs with cottage cheese and mix
Mark as complete

Line muffin tin or brush bottom with oil and add your mixture
Mark as complete

Bake for 20-22 min on 350 F

Let cool for 10 min and enjoy

Notes

Storage instructions- can refrigerate for up to 2 days or freeze for up to 1 month
