Yummy yummy sweet potato broccoli fritters! I love these, they are so simple to make, with clean ingredients that you probably have in your house right now, they come together beautifully, packed with the goodness of veggies in a form that’s fun to eat. They are a nutritious and tasty option for babies and kids, combining two powerhouse veggies in a fun, finger-food form.
Sweet potatoes bring natural sweetness and are packed with fiber, vitamin A, and potassium, which are essential for vision, immune health, and digestion. Broccoli adds a dose of vitamins C and K, as well as folate, supporting bone health and immunity. Perfect and soft enough for little one's that are transitioning from purees to solids or practicing baby-led weaning (BLW). To make you steam sweet potato with broccoli, mix with egg and some flour or oat flour to bind everything together. Cook spoonful's of the mixture on a hot skillet until golden brown, creating a crispy outside with a soft interior.
The texture is ideal for little hands, and the fun finger-food format makes them easy for kids to grab and self-feed. They can be served warm or at room temperature, making them great for lunchboxes, family meals, or quick snacks on the go. Plus, you can freeze a batch for busy days, making these fritters a convenient, healthy option anytime. It can be served for breakfast, lunch or dinner! We love to serve it with a little dip, like whole milk plain yogurt, you can squeeze a little lemon with it and have fun with it.
Substitutions:
All-purpose Flour: you can sub with whole wheat flour, spelt flour, gluten-free flour or oat flour
Eggs: You can sub with a plant based egg alternative
