Ingredients

Adjust Servings
1-2 zucchinis (depending how much you want to make)
2 eggs
1 tsp salt
1 tsp paprika
pinch of black pepper
1 cup breadcrumbs (if making more you'll need more)
cooking oil spray

Directions

Wash and dry the zucchini. Peel some of the skin off (not all, leaving some peel adds color and nutrients) and cut into fry-shaped sticks

Make the egg wash by whisking eggs, along with salt, pepper, paprika and add zucchini sticks to the egg wash. Make sure to cover all of them

Place breadcrumbs in a separate bowl. One by one (or in small batches), coat the zucchini sticks in breadcrumbs, pressing down so they stick well. Place them on airfryer tray or baking tray while you finish coating the rest

Spray well with oil and airfry on 385F for 10-12 minutes flipping halfway through. When you flip them spray well with oil and cook for the remaining time
