These Vanilla overnight oats are the perfect consistency, not too thick, not too much liquid, they are just right. The oat flour makes it super creamy and smooth, and surprisingly me and my 6 year old daughter like to eat it this way as well. Vanilla overnight oats are a simple and nutritious vegan breakfast option perfect for kids, made by blending milk with date and vanilla essence, soaking oat flour and chia seeds in the milk. The vanilla adds a gentle, comforting flavor that kids love, along with the date, which adds a subtle, tasty sweetness. You can easily customize the oats with toppings like fresh fruits, nuts, or a drizzle of honey for older kids, making it both fun and nutritious. This is a great recipe if you are short on time, you can prep it the night before and serve it the next day as breakfast or a snack. This vegan option is what I like to call plant based power, filled with lots of fiber, vitamins, and minerals, keeping kids full and energized, ensuring they have a balanced meal to kickstart their day.
How to Serve:
Right before I served, I topped it off with different fruit options like banana, blueberries and chopped plum, you can add any fruit you prefer, coconut flakes or nut and seed butter of choice.
Substitutions:
Oat Flour: You can used instant oats as well
Chia seeds: I like to add this for extra nutrition, but if you don't have you can swap for flaxseeds
Non-dairy milk: This recipe works well with any milk you prefer, cow milk, almond milk, coconut milk, oat milk, etc.
Date: For kids 12+ months you can swap date with honey or maple syrup
