Vegetable Frittata Loaf: A Nutritious and Kid-Friendly Meal for 10 months & up

A vegetable frittata loaf is a delicious, protein-packed meal that is perfect for babies, toddlers, and the whole family. Made with eggs, colorful vegetables, and yummy cheese, this soft and fluffy loaf is an easy way to incorporate more veggies into your child’s diet. I love how easy it is to make, just grate your veggies throw it in a bowl with some eggs and flour and add to your loaf pan. Made with clean, simple, healthy ingredients. Unlike traditional frittatas, a frittata loaf is baked in a loaf pan, making it easy to slice into baby-friendly portions, finger food pieces, or sandwich-style servings. It’s great for breakfast, a quick lunch idea, or dinner idea and can be customized with different vegetables and flavors. You can eat it cold as well, goes great in lunchboxes or a quick lunch with some fruit on the side.

Substitutions:

Eggs- In this recipe I don’t recommend replacing the eggs

Vegetables- I used sweet potato, broccoli and carrot. You can swap any of these for veggies you and your little one prefer, like spinach, red bell pepper, mushrooms, zucchini, onion, etc.

Cheese- I used a mix of yellow cheddar and mozzarella for this recipe. You can swap for non-dairy cheese to make this non-dairy.

Flour- I used regular all-purpose, but most flours will work. You can use spelt flour, gluten-free flour, whole wheat flour or oat flour.

Ingredients

Directions

  1. Prep all your veggies. Grate sweet potato and carrot. Chop broccoli florets really small.
  1. Add 3 eggs to mixing bowl and whisk
  1. Add all your veggies, along with cheese, flour, baking powder and mix
  1. Spray loaf pan or add piece of parchment paper. Add mixture and sprinkle more cheese on top.
  1. Bake on 350F for 30 minutes
  1. Let cool for 10 minutes, slice your loaf and enjoy!
