Veggie Chicken Burgers for Kids: Nutritious and Delicious Dinner Idea for 11 months baby & up  

If you are looking for yummy, healthy dinner ideas for kids this one comes out amazing and the whole family can enjoy it together! The burgers are made with clean, wholesome ingredients with 4 different veggies inside! If you have a picky eater at home, this recipe is definitely worth a try. They are freezer-friendly and made for meal-prepping. They do take a little more time to make, but in the end you have chicken burgers in the freezer for the whole month! Whenever I have nothing to serve the kids, I literally heat 1-2 burgers up in the microwave for 30 seconds and you wouldn’t even know its from the freezer.

 

Why Veggie Chicken Burgers Are Great for Kids?

    For busy parents that don’t have time to always make a nutritious dinner, these burgers freeze really well. It comes out about 23-24 burgers, any leftovers you have can go straight in a Ziplock into the freezer. It makes things so much easier on those busy days.

 

Tips for Success:

  • Make sure to grate all your vegetables or shred them in a food processor. Once shredded add your vegetables onto a pasta strainer over a bowl, cover them with 1 tsp of salt, to retain all the moisture and to let the excess liquid drip down. Let sit for 10 minutes and after 10 minutes squeeze out any excess liquid.
  • Make sure to mix your chicken mixture really well.
  • Form your chicken burgers before you begin to fry them, to make the cooking process smoother.
  • I like to form mini chicken burgers, the kids enjoy them better.
  • After frying, add to baking tray with parchment paper and finish baking them in the oven, to ensure it is cooked through.

 

Serving Suggestions

  • As a Burger: Serve the patties in mini whole-grain buns with a dollop of yogurt or avocado.
  • On Their Own: Serve with a side of sweet potato fries or steamed veggies for a complete meal.
  • In a Wrap: Crumble the burgers into a whole-grain tortilla with lettuce and tomato for a fun lunch option.

 

Substitutions:

Ground Chicken Breast- This can be swapped for ground turkey

Zucchini, Carrots, Potato & Onion- I haven’t tried swapping these vegetables, but if you prefer to omit one of them that’s fine. The only one I don’t recommend removing is the potato, since it holds the burger together.

Egg- You can omit the egg and add a bit more breadcrumbs

Breadcrumbs- For gluten-free option, swap breadcrumbs for oats or gluten-free breadcrumb option.

Ingredients

Directions

  1. Peel and grate all your veggies with a grater or food processor and add to a strainer
  1. Add 1 tsp of salt and let veggies sit for 10 minutes
  1. After 10 minutes strain any excess liquid and add to dry bowl along with ground chicken breast, egg, breadcrumbs, turmeric, garlic powder, pepper and mix everything really well for 1-2 minutes
  1. At this point preheat oven to 375 F and start preparing your burgers. I like to make mine a little smaller so it's easier for the kids to eat.
  1. Add avocado oil on heated pan and lightly fry burgers for 3-4 minutes on each side, just until they get a golden color and add to baking tray
  1. Finish cooking them in the oven uncovered for 13 minutes
  1. Let cool & Enjoy!
