White Cauliflower Bean Soup

If you are looking for easy lunch or dinner ideas for babies, toddlers or older kids, this tasty White Bean Soup is perfect! This creamy, protein-packed soup can be easily adapted to your liking, so the whole family can enjoy it together. Made with simple ingredients like white beans, potato, cauliflower and seasoned with sauteed onions and garlic, it provides essential nutrients without overwhelming flavors, which is ideal for young palates. This soup is vegan, allergen-friendly, egg-free, dairy-free, gluten and nut free.

Substitutions:

Cannellini Beans- I used cooked jarred cannellini beans, you can replace with white navy beans

I don’t recommend changing any other ingredients in this recipe.

Ingredients

Adjust Servings
1 onion
2 garlic cloves
1 potato
1/2 head cauliflower
1/2 cup + 1 tbsp cannellini beans
salt to your liking
Pinch of black pepper
4 cups water or broth
Olive oil for cooking

Directions

Cut and prep all your veggies

Drizzle olive oil to heated pan and sauté onions for a few minutes till golden brown

Add garlic and sauté for an additional minute

Bring to a boil and cover for 30-35 minutes till soft and ready
