You get fiber, protein, and vitamins in every bite! Whether served as a snack, a side, or even a quick breakfast, zucchini fritters are one of those easy, wholesome recipes that always work. - For Babies 8-9 Months: Serve as a soft strip for baby to grasp or cut into bite-sized pieces.
- For Babies 9-12 Months: Cut into small pieces with a dip, like cottage cheese, yogurt or hummus.
- For Toddlers 12+ Months: Serve cut up or whole, with a side dip like cottage cheese, yogurt or hummus. You can add some fruit on the plate to make it a complete meal.

What you need:
Medium Size Pan– I like to use my Our Place medium size pan. It’s non-toxic, non-teflon and cooks perfectly without a lot of oil.
You will need a cheese cloth or paper towel to squeeze out the liquid from zucchini. I honestly use paper towels and they work great.
Ingredients & Substitutions:
Eggs- For this recipe I don’t recommend substituting the eggs with anything.
Zucchini- You can swap this for another veggie if preferred. Like broccoli or carrot.
Flour- I used all-purpose in this recipe, but you can use gluten-free flour, whole wheat flour, spelt flour, etc.

Peel and grate zucchini and squeeze out all liquid, by using a cheese cloth or paper towel

Add to a bowl, along with eggs, flour and mix

In heated pan add a little avocado oil and start forming your fritters. Cook on each side for 3-4 minutes on medium heat

Cool and serve along side cottage cheese or yogurt and some fruit, enjoy!
