Coconut Milk Rice W/ Pumpkin

Wash, cut and peel pumpkin

Add pumpkin, rice and coconut milk to a pot

Add cup of water and bring to a boil

Sprinkle some cinnamon and mix

Simmer on low, covered for 25 min
