Coconut Milk Rice W/ Pumpkin

I myself ended up eating some with my baby and added a little maple syrup on top, wow it was divine.

Ingredients

Adjust Servings
1/4 pumpkin/squash I like to use Kabocha Squash
1/2 cup coconut milk Try and find one with no gums added to ingredients in a can
1/3 cup rice
1 cup water
Dash of Cinnamon

Directions

Wash, cut and peel pumpkin
Mark as complete

Add pumpkin, rice and coconut milk to a pot
Mark as complete

Add cup of water and bring to a boil
Mark as complete

Sprinkle some cinnamon and mix
Mark as complete

Simmer on low, covered for 25 min
Mark as complete
