Ingredients

Adjust Servings
For the chicken meatballs:
1.5-1.7 lbs. ground chicken breast
1 egg
1/2 cup breadcrumbs
1/2 tsp turmeric
salt & pepper to your liking
For the sauce:
2 tbsp olive or avocado oil
1 onion
2 tbsp tomato paste
1/2 tsp turmeric
salt & pepper to your liking
3 cups water
Add ins:
2 carrots
2 gold potatoes
2 cups frozen green peas

Directions

Preheat oven to 375F

Cut all veggies- onion, carrots, potatoes and put peas on the side

Make meatballs- add ground chicken to a bowl, along with egg, salt, pepper, turmeric, breadcrumbs and combine everything together really well. With your hands shape meatballs before cooking for smoother cooking experience

In a large oven-safe skillet add oil, onion, salt, pepper, turmeric and saute for 2-3 minutes until golden

Add tomato paste, water, mix well and bring to a boil

Start adding meatballs gently into sauce, they are very delicate so you can reshape them a little before adding to pot
Do not touch the meatballs with any utensils, instead swirl the pot around to get sauce on all the meatballs

Add veggies- potatoes, carrots, peas and bring to a boil

Cover and add to oven for 1 hour (60 minutes)
If you do not have an oven safe pan or oven you can continue to cook the meatballs on stove top for the same amount of time on low heat (at a 3 setting)
