I started making this recipe because I wanted a wholesome, flavorful meal that the whole family, even my toddler could enjoy. The chicken turns out unbelievably soft and tender, never dry or tough, thanks to the light flour coating and gentle simmering with the veggies. It’s golden, juicy, and pairs perfectly with earthy mushrooms and creamy potatoes for a truly comforting meal.

Substitutions:

  • Flour: I used all-purpose flour, but this can be substituted with whole wheat flour, white spelt flour or gluten-free flour.
  • Avocado Oil: can swap with any neutral oil.

Ingredients

Adjust Servings
6 pieces chicken breast
1 cup all-purpose flour
3 tbsp avocado oil or any neutral oil
1 onion
2 gold potatoes
1 pack baby bella mushrooms (8 oz. pack)
2 1/2 cups water or chicken broth
1 tsp salt
1 tsp turmeric
1/4 tsp black pepper

Directions

Prep all ingredients before hand for smoother cooking- wash, peel and cube potatoes, slice mushrooms and if needed cut chicken breast.
I recommend having slightly thinner slices of chicken breast

To a bowl add flour, salt, pepper and mix. Coat each piece of chicken and put to the side.

Heat avocado oil in a large skillet over high heat. Add the chicken and sear for about 3 minutes per side until golden brown. Remove and set aside.

Lower heat to medium, add onion and sauté for 3-4 minutes until golden

Add potatoes, mushrooms, salt, pepper, turmeric and mix

Return the chicken to the pan, along with water or broth and bring to a boil. Make sure you pat down the chicken so its covered with the liquid

Cover and cook for 20-25 minutes on medium heat
Check throughout cook time to make sure liquid does not dissipate. Depending on stove top and pan, you might need to add a little more liquid, I didn't have to.

Serve warm with a sprinkle of fresh parsley or grated parmesan if you’d like and enjoy!
For babies and toddlers you can cut up or mash into finer pieces

Notes

Storage instructions- Store leftovers in an airtight container in the fridge for up to 4 days. I haven't tried freezing this dish, but you can freeze in a tupperware for up to 2 months.
Reheating instructions- This dish reheats really well, I literally put it in the microwave for 50-60 seconds and it comes out so good.
