Adjust Servings
For Chicken Marinate-
1-1.2 lbs. cubed chicken breast
1/4 cup avocado oil or olive oil
juice from 1/2 lemon
1/2 tsp salt
1/2 tsp cumin
1/4 tsp black pepper
1 tsp paprika
1/2 tsp baking soda
1 cup orzo
1 onion
1/2 bell pepper
1/2 cup crushed tomatoes
1 tbsp tomato paste
2 cups water

Directions

Prep everything beforehand for easier cooking process- start by cubing chicken breast (for little one's make sure to cut them smaller). Add to a bowl with oil, salt, pepper, cumin, paprika, lemon juice, baking soda, mix and let it sit for at least 10 -15 minutes

In the meantime dice an onion, bell pepper, set aside your orzo, crushed tomatoes and tomato paste

In large non-stick deep pan start by cooking chicken on medium-high heat for 5-6 minutes until seared and golden. Remove chicken from pan leaving the oil behind

Add, onion, bell pepper and sauté for 5 minutes on medium heat

Continue by adding orzo, crushed tomatoes, tomato paste and mix. Add chicken, 2 cups of water. Stir everything together well

Bring to a boil, once boiling reduce heat to low (I put it on a 3 setting), cover and let it cook for 20 minutes
Check it halfway through to see if it needs a little more water or a little mix so it doesn't burn on the bottom

Notes

Storage instructions- Store in an airtight container for up to 4 days.
Freezer- Freeze for up to 2 months.
Reheating- Reheat with a splash of water or broth to loosen the sauce and restore creaminess.
