This is one of those recipes I make on busy days when I want something homemade and flavorful but don’t want to stand over the stove. Ingredients

6-7 chicken drumsticks (leave skin on)
1/3 cup low sodium soy sauce
2 tbsp oil (can be sesame oil, avocado oil, olive oil etc.)
1/4 cup honey
2-3 garlic cloves
1/2 tsp ginger powder (or grated fresh)

Directions

Preheat oven to 400F

In a small mixing bowl make sauce- add soy sauce, oil, honey, garlic, ginger and mix well

Add drumsticks to casserole baking dish or a pyrex baking dish and pour sauce over
If you want to add sliced veggies add it now- you can add sliced onion, red bell pepper, sliced carrots, broccoli florets or snap peas

Cover with a damp parchment paper or aluminum foil and bake for 50 minutes, flipping halfway through

Uncover the chicken and bake for an additional 10 minutes

Notes

Store leftover honey soy chicken drumsticks in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in the oven at 350°F until warmed through.
For longer storage, freeze the cooked drumsticks (with sauce) in a freezer-safe container for up to 1 month. Thaw overnight in the refrigerator and reheat until hot. The chicken stays tender and flavorful, making it great for meal prep lunches or easy dinners later in the week.
