I think I have officially mastered the egg bite. I’ve made quite a few versions over the years, but these Cheddar Pepper Potato Egg Bites are, without a doubt, the best ones yet. They’re soft, fluffy, packed with flavor, and unlike many homemade egg bites, they aren’t watery or rubbery. They reheat beautifully from both the refrigerator and freezer, making them one of my favorite breakfast meal prep recipes.
The biggest stamp of approval came from my daughter. She has never been a big fan of eggs, so the fact that she happily ate these says everything. The combination of tender potatoes, sweet sautéed red bell peppers melt into the egg bites, fluffy eggs, and melted cheddar cheese makes them so flavorful that even picky eaters may be surprised by how much they enjoy them.

- Eggs: I do not recommend substituting the eggs in this recipe. They are the base of the egg bites and essential for the texture and structure.
- Cottage Cheese: Ricotta cheese or farmer cheese can be used instead of cottage cheese. They both create a creamy, fluffy texture while adding protein.
- Cornstarch: Arrowroot powder can be substituted 1:1 for the cornstarch.
- Red Bell Pepper: Feel free to swap with finely diced yellow, orange, or green bell pepper, or even sautéed spinach or mushrooms.
- Potatoes: I recommend using Yukon Gold potatoes for their creamy texture, but idaho potatoes or russet potatoes will also work. Just be sure to dice them into small cubes so they cook evenly.
- Cheddar Cheese: Swap with mozzarella, Monterey Jack, Colby Jack or your favorite melting cheese.
- Seasonings: Feel free to adjust the garlic powder, onion powder, and salt to your family’s preference. You can also add a pinch of paprika, black pepper, or chopped chives for extra flavor.
