Ingredients

1 medium zucchini
2 eggs
1/2 cup full fat cottage cheese
3/4 cup shredded cheddar cheese
1 cup all-purpose flour (sifted)
1 tsp baking powder
Optional

Directions

Grate zucchini into medium size bowl, using the small side of the grater. Squeeze out the excess liquid.

Notes

Storage instructions- Store in an airtight container in the refrigerator for 4 days.
Freezer: freeze for up to 2 months.
Reheat in the microwave for 20โ€“30 seconds or warm in the oven until heated through. You can also thaw from the freezer on the counter for 30 minutes.

    I just made these and they’re absolutely delicious. Definitely add some salt if you’re making for a toddler. I know my picky toddler will refuse these but I’m excited for baby to have them. They’re even super delicious bites for me! I hope they hold up well in fridge too.

      Hi Ekim, so happy to hear you guys enjoyed the recipe! Try it with your toddler as well, they might surprise you! The best way to store the left overs is in the freezer and you can just reheat for 30-35 seconds in the microwave and they taste great. Enjoy.
