๐ง Cheddar Zucchini Muffins ๐ฅ
If you’re looking for a savory muffin that’s nutritious, easy to make, and loved by the whole family, these Cheddar Zucchini Muffins are about to become a new favorite! They’re unbelievably soft, fluffy, cheesy, and flavorful, yet they’re made with just a handful of wholesome ingredientsโall mixed together in one bowl. Even better? There’s an entire zucchini hidden inside, and the kids can’t even tell!
As a mom, I love recipes that sneak extra vegetables into foods my kids already enjoy, and these muffins do exactly that. They’re perfect for busy mornings, lunchboxes, afternoon snacks, or even served alongside dinner. Since they’re packed with protein and calcium from the cottage cheese, eggs, and cheddar cheese, they’re filling enough to keep little bellies satisfied. Best of all, there are no oils, no complicated ingredients, and no extra fuss, just simple, nourishing ingredients that come together in minutes.
These muffins also freeze beautifully, making them one of my favorite meal prep recipes. I always keep a batch in the freezer because they’re easy to reheat for a quick breakfast or snack, and everyone from toddlers to adults happily eats them!

๐ก Tips for Success
- ๐ฅ Don’t skip squeezing the zucchini! Removing the excess moisture helps keep the muffins light and fluffy instead of dense. Use the smaller side of grater for kids, so that it melts easily into the muffin.
- ๐ง Use freshly shredded cheddar for the best melt and flavor.
- ๐ฅฃ Mix just until the ingredients are combined to keep the muffins tender.
- ๐ง Fill the muffin cups about ยพ full for beautifully domed muffins.
- โ๏ธ Freeze extras individually so you can grab one whenever you need a quick meal or snack.
๐ Substitutions
Here are a few easy swaps if you need to adjust the recipe:
- ๐พ Flour: All-purpose flour, white whole wheat flour, or white spelt flour all work well in this recipe. You can also use a 1:1 gluten-free all-purpose flour blend, but keep in mind the texture may be slightly different and the muffins may not be quite as fluffy.
- ๐ง Cottage Cheese: You can substitute the cottage cheese with farmer’s cheese or ricotta cheese for a similarly soft, creamy texture.
- ๐ฅ Eggs: I haven’t tested an egg substitute in this recipe, so I can’t guarantee the results. Since the eggs help provide structure and contribute to the fluffy texture, replacing them may change how the muffins turn out.
- ๐ง Cheddar Cheese: Feel free to use another good melting cheese like Monterey Jack, Colby Jack, mozzarella, or a Mexican cheese blend if that’s what you have on hand.
- ๐ฅ Zucchini: While zucchini works best for keeping these muffins moist and tender, you could experiment with grated yellow summer squash in its place. Be sure to squeeze out the excess moisture just as you would with zucchini.

I just made these and they’re absolutely delicious. Definitely add some salt if you’re making for a toddler. I know my picky toddler will refuse these but I’m excited for baby to have them. They’re even super delicious bites for me! I hope they hold up well in fridge too.
