These 3-ingredient sweet potato pancakes are one of my favorite easy breakfasts for babies and toddlers! They are incredibly soft, naturally flavorful, and made with just one sweet potato, two eggs, and a little flour. They’re especially great for baby-led weaning because they’re soft enough for little hands to pick up and easy for babies to mash with their gums. They can be served starting from 8 months old & up.

You only need a few simple ingredients, but the result is so delicious that the whole family can enjoy them. I love making one batch and serving it differently depending on who is eating—baby gets theirs with yogurt mixed with peanut butter, toddlers get a little maple syrup, and adults can enjoy them the same way. One breakfast, no separate meals! 🙌

You only need three ingredients to make these soft sweet potato pancakes!

🍠 Sweet Potato

You’ll need 1 roasted sweet potato, which should give you about ¾ cup mashed sweet potato. Roasting the sweet potato brings out its natural sweetness and gives the pancakes so much flavor.

🥚 Eggs

Two eggs help bind the ingredients together while adding protein and nutrients to these pancakes.

🌾 All-Purpose Flour

Just 3 tablespoons of all-purpose flour gives the batter enough structure to hold together while keeping the pancakes soft and tender.

✨ Optional Cinnamon

Cinnamon is completely optional, but I love adding a little for extra warmth and flavor. It makes these pancakes taste even cozier!

  • All-purpose flour: You can experiment with another flour, but all-purpose flour gives these pancakes a soft texture. You can substitute with white spelt flour or white whole wheat flour.
  • Sweet potato: Substitute with roasted pumpkin or butternut squash for similar flavor.

1 roasted sweet potato (about 3/4 cup mashed)

Wash and pierce sweet potato with fork, cover with foil and roast in oven for about 35-40 min till soft and tender.
You can steam sweet potato as well, but I have noticed the best flavor is when it's roasted

When ready scoop out the flesh and mash until smooth in medium size bowl. You should have approximately ¾ cup mashed sweet potato.

Heat a lightly greased pan over medium heat (once really hot reduce to low-medium heat). Scoop small portions of batter into the pan and form your pancakes. Cook for 2-3 minutes on each side till cooked through
