It’s getting close to Halloween and caramel apples are a big deal around here, but me and the kids are never able to enjoy them. Traditional caramel apples are too hard, too sticky, way too much sugar to eat, while these Caramel Apple Pops are made with yummy, wholesome, nutritious ingredients. They are vegan, gluten-free and dairy-free. Apples are a nutritious fruit that toddlers can easily handle, providing them with vitamins, fiber, and natural sweetness. By making a healthier caramel alternative, you can offer your little one a sweet treat without resorting to refined sugars, preservatives, or heavy processed ingredients. They are rich in fiber, which helps support healthy digestion and keeps their tummies full. The apple pops are very easy to make, with only a few ingredients. Made by blending apples, almond butter, date and some coconut milk, while the caramel is made by blending dates with a splash of vanilla and coconut milk. You can drizzle it on top of the apple pop or have some fun dipping it, or make an activity out of it with your kids and decorate the apple pop with the caramel however you want. I myself added the caramel in a ziplock bag and made a cute swirly design. These are excellent for any occasion, make them on a hot summer day, during fall for Halloween or if you have a little one teething, this is something they will surely enjoy.
What you need:
Popsicle Mold- I like to use one that comes with wooden popsicle sticks, but any one will work.
Here are two popsicle mold options you can use- popsicles 1, popsicles 2.
Substitutions:
Apple- If you don’t want to use apples you can replace with 2-3 bananas
Dates- I don’t recommend swapping the dates out in this recipe
Coconut milk- You can swap with 1/2 cup heavy cream and 1/2 cup milk

Cut and peel apples

Add to blender along with date, coconut milk, cinnamon, almond butter and blend

Add to popsicle mold and freeze for a few hours

When ready make your caramel- add pitted dates to a bowl and add the boiling water. Set aside for 15 minutes for dates to soften

When ready add to blender along with the water, coconut milk, vanilla extract and blend until nice & creamy

Add to your popsicles however you like or dip and enjoy! You can eat it like that or put back in the freezer for the caramel to harden
