This homemade version is something toddlers, older kids, and adults all happily eat, making it perfect for lunch, dinner sides, or even a snacky meal. It is just as good and everyone in your house will devour them!

What I love most about this recipe is how easy the dough is. No yeast, no rising, no waiting around. It comes together in minutes and bakes into the most golden, cheesy, incredibly delicious garlic bread that rivals any takeout version, without additives or preservatives.

Ingredients

1 cup white spelt flour (or all-purpose)
1 tsp baking powder
1 cup whipped cottage cheese + a little more for spreading on dough
1 tbsp olive oil
3/4 cup shredded cheese (a mix of mozzarella and cheddar)
1/2 tsp salt
1 tsp garlic powder
1 tsp Italian seasoning

Preheat oven to 375F

Start by mixing the whipped cottage cheese, white spelt flour, and baking powder together in a bowl until a shaggy dough forms
I like to whip my cottage cheese in a blender to remove the clumps, it's not necessary but it will give you a smooth dough

Lightly flour your surface, transfer the dough and knead for about one minute, just until it comes together
If dough is too sticky add a little more flour on top when kneading

Line a medium baking sheet with parchment paper and drizzle olive oil directly onto the paper. Place the dough on top, wet your hands with the oil from the tray and gently press and stretch the dough into a thin square (really try and thin it out till its covering the whole baking tray, to ensure you don't have a thick dough)

Spread a thin layer of whipped cottage cheese over the dough, sprinkle generously with shredded mozzarella and cheddar, season with salt, garlic powder, and Italian seasoning then finish with another little drizzle of olive oil

If you want a softer dough 20 minutes should be enough, if you want a crispier dough bake for an additional 2-3 minutes
