Ingredients

Adjust Servings
1 cup cubed frozen mango
3 medjool dates (pitted)
1 tsp vanilla
1 tbsp melted coconut oil
1 cup + 2 tbsp instant or rolled oats
1 tbsp water
coconut shreds for coating

Directions

Add all ingredients to a food processor- frozen mango, dates, melted coconut oil, vanilla extract, oats and splash of water and blend until mixture is combined. Blend for about 30 seconds to get the texture that is needed
If the mixture is too wet you can add 1-2 tbsp more of oats, if it's too dry add another splash of water, but these were my exact measurements I didn't have to add anything.

With a tablespoon scoop mixture, roll into bite-size balls and roll in the desiccated coconut

Store in airtight container, make sure to leave in the fridge to firm up for at least 15-20 minutes

Notes

Storage instructions- can refrigerate in airtight container for 5-7 days or freeze for up to 1 month. If freezing you can thaw the balls in the fridge before serving.
