One Pot Quinoa & Veggies

This recipe is for 6+ months

 

If you haven’t introduced quinoa to baby yet this is a great recipe to start with, that you can share with your little one. This comes out so tasty and introduces baby to lots of different flavors and textures, expanding baby’s pallet. Quinoa is one of those grains that are more elite than the others, it has everything required for baby’s growth and development. Quinoa is a complete plant protein with lots of antioxidants, iron, omega-3, omega-6, B Vitamins and calcium. Whenever I make this for my little one I am happy knowing he is eating a hearty, healthy, nourishing bowl that is easy on the tummy and great for digestion.

Ingredients

Adjust Servings
1 cup quinoa
1 onion
1 carrot
1 gold potato
1 zucchini
1/2 head broccoli
1/4 tsp tumeric
1/8 tsp black pepper
1 tsp olive oil
2 1/2 cups broth or water

Directions

Prep and cut veggies and wash quinoa
Mark as complete

Heat up pot with olive oil, add onion, turmeric, black pepper and saute for a few min
Mark as complete

Add all your veggies, quinoa and mix
Mark as complete

Add water or broth, bring to boil and cover on medium heat for 30 min
Check throughout cook time to make sure you don't need to add more liquid
Mark as complete

Once ready take out baby's portion and blend with a little liquid
Mark as complete

Notes

Storage instructions- can refrigerate for 3-4 days or freeze for up to 1 month
