Ingredients

Adjust Servings
1 cup red lentils
1 onion
2 garlic cloves
1 carrot
1 potato
2 pieces chicken breast
1/2 tsp salt (omit under 12 months of age)
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp black pepper
5 cups water
1 tbsp olive oil for cooking
Optional
squirt of lemon juice

Directions

Prepare all ingredients for smoother cooking- wash red lentils, cut onion, garlic, potato and carrot
Mark as complete

Add olive oil to heated pot, along with onion, salt, pepper, turmeric, paprika, cumin and sauté for 3 minutes until golden brown
Mark as complete

Add garlic and sauté for another 30 seconds to bring out the flavor
Mark as complete

Add carrot, potato, chicken breast, water and mix
Mark as complete

Bring to a boil and cover on medium heat for 30 minutes

When ready remove chicken breast and shred

Hand blend the rest of the soup until desired consistency and add shredded chicken breast back in

Add a squirt of lemon juice, slightly cool and serve!

Notes

Storage + Freezer Instructions: Refrigerator: Store in an airtight container for up to 3 days. Freezer: Portion into baby-safe containers or silicone cubes. Freeze for up to 2 months.
Reheat: Warm gently on the stovetop or microwave in short intervals. Add a splash of water or broth if it thickens. Meal Prep Tip: Freeze small baby portions and thaw one serving at a time for quick lunches!
