Substitutions:

  • Flour: You can use all-purpose flour, white spelt flour or white whole wheat

  • Avocado oil: Can be replaced with melted coconut oil or another neutral oil.

  • Maple syrup: Honey can be used for children over 1 year old.

  • Apples: Any sweet apple works well Gala, Fuji, or Honeycrisp are great choices. Just be sure to dice them very small for a soft texture.

Oats: I do not recommend replacing the oats in this recipe. They play a big role in the soft, slightly crumbly texture.

Ingredients

Adjust Servings
1/2 + 3 tbsp all-purpose flour
1/2 cup instant or rolled oats
1 tsp cinnamon
1 tsp baking powder
1/3 cup avocado oil or any neutral oil
1/4 cup maple syrup
1 apple (diced)

Directions

Preheat oven to 350 F

In a medium bowl, whisk together the flour, oats, baking powder, and cinnamon

Add the avocado oil and maple syrup and mix until a soft dough forms

Peel and dice an apple in small pieces. Add to dough and fold in

Scoop dough onto parchment paper lined baking sheet and lightly flatten (not all the way)

Let cool completely before serving. Cookies can crumble easily, especially when warm, will firm up as they cool. Drizzle yogurt on top and enjoy!

Notes

Storage instructions- Room Temperature: Store in an airtight container for up to 2 days. Refrigerator: Keep in an airtight container for up to 4 days. The cookies stay soft and tender.
Freezer: freeze for up to 2 months.
To Serve From Frozen: Let thaw at room temperature or warm briefly for a few seconds until soft.
