This soft flatbread pizza holds a very special place in our house because it’s the first pizza my 1-year-old could actually eat and enjoy. Every time we ordered pizza from outside, the flavor was great, but the texture was always the problem. The crust was too tough, too chewy, and hard for him to manage. I wanted him to experience pizza night with us, not just pick at toppings. That’s exactly why I started making this soft flatbread version at home.

The result? A pizza that comes out pillowy soft, flavorful, and easy to chew, yet still delicious enough that adults genuinely love it. This isn’t a “kid-only” recipe, it’s one the whole family gets excited about, and it freezes beautifully for busy weeks.

It does take a little time for the dough to be ready, but that’s exactly what makes this flatbread pizza so soft and fluffy. The slow rising is what gives the crust its pillowy texture and makes it easy for little ones to chew. The best part is that once the dough is mixed, it mostly rests on its own, you can let it rise, go about your day, and come back to it when you’re ready. It’s made with really simple, everyday ingredients and that extra bit of patience turns them into something truly special.

  • Low-moisture mozzarella for less grease

  • Mild cheddar or Colby-Jack (great mixed with mozzarella)

  • Ricotta dotted lightly for extra softness

Topping ideas (finely chopped & soft):

  • Marinara or pizza sauce

  • Finely chopped bell peppers

  • Mushrooms (sautéed first for softness)

  • Cooked spinach

  • Very finely chopped broccoli

Tips for toddlers & babies:

  • Keep toppings minimal so the crust stays soft

  • Chop everything very small

  • Avoid spicy, hard, or overly crispy toppings

  • Cheese + sauce alone is always a win

🔄 Substitutions & Notes

  • Honey or sugar: Either works well. Use honey for a slightly softer crust and more flavor, or sugar if preferred. (Do not use honey under 12 months old)

  • All-purpose flour: Works best for a soft, fluffy texture. A 1:1 gluten-free flour blend can be used, but the crust may be slightly less fluffy.

  • Olive oil: Can be swapped with avocado oil or another neutral oil.

  • Yeast: Active dry yeast or instant yeast both work.

  • Water: Must be warm, not hot. Hot water can kill the yeast and prevent the dough from rising properly.

What I don’t recommend:

  • Skipping the rise time, it’s what makes the crust soft and easy to chew.

  • Using whole wheat flour only, as it can make the crust denser and harder for toddlers.

Ingredients

Adjust Servings
3 1/2 cups all-purpose flour (sifted)
1 tbsp active dry yeast or instant
1/2 tbsp salt
1/4 cup sugar or honey
1/4 cup olive oil
1 1/3 cups warm water
marinara or pizza sauce
shredded cheese (mozzarella works best but you can do a mix)

Directions

Sift flour into a bowl and add rest of dry ingredients- salt, yeast, sugar (if using honey add it along with the wet ingredients)

Once combined, use an electric mixer on low speed and slowly add warm water, olive oil and honey if using. Knead dough for 5-7 minutes until smooth
If you don’t have a mixer, this dough can absolutely be kneaded by hand for the same amount of time

Lightly coat the dough with olive oil, form it into a ball, cover, and let it rise for 1 hour, until doubled in size

After an hour, gently release the air, do a few light folds, cover again, and let it rest for another 30 minutes

After the second rise, divide the dough into two portions—this recipe makes two large flatbread pizzas. Drizzle olive oil onto large baking tray, press the dough out gently and add your toppings. I like to keep it simple for little one's with marinara sauce and cheese but you can add whatever you and your family likes
Tip: When making the rectangle get some olive oil from baking tray onto your hands, this will help you shape it better. I like to make my rectangle on the thinner side, since it does puff up and rise in the oven

Bake at 375°F for 15 minutes, until the cheese is melted and the crust is lightly golden
Tip: To check if it's ready lift up the pizza and look at the bottom, if it is still on the whiter side leave it in for another few minutes. It should be lightly golden.

When ready, slice your pizza with a pizza cutter and enjoy!
This flatbread pizza freezes extremely well. You can freeze slices and reheat when needed, making it perfect for quick lunches, dinners, or busy nights

Notes

Storage instructions: Refrigerator: Store baked pizza in an airtight container for up to 4 days. Freezer: Freeze fully baked pizzas or individual slices in a freezer-safe bag for up to 2 months.
To Reheat: Warm in the oven at 350°F until heated through, or reheat in a skillet to keep the crust soft. For quick meals, the microwave works well too

    This was really easy to make. My 17 month old loved it. I personally think it was too sweet so would use less sugar next time. Will definitely be adding this to the recipe book.
