Ingredients

Adjust Servings
1 canned tuna (drained)
1/2 cup canned corn (drained)
2 eggs
2 1/2 tbsp flour of choice (all-purpose, gluten-free, oat flour)
Optional
Add ons: green onion, herbs, shredded cheese, seasoning, etc.

Directions

Start by draining tuna and add to a bowl
Mark as complete

Mash the tuna and add, eggs, corn, flour and combine together
Mark as complete

Heat a pan with a little oil and start to form your fritters. Cook for about 3 minutes on each side on medium heat until golden and cooked through
I like to flatten them out while cooking so they are thinner

Slightly cool and serve along side a dip, fruit or side salad

Notes

Storage instructions- refrigerate for up to 3 days.
Reheating instructions- reheat a bit in the microwave or toaster oven
