If there’s one type of recipe I always used to keep stocked in the fridge or freezer when my kids were younger, it’s veggie fritters. They’re easy to make, packed with nutritious ingredients, and perfect for babies, toddlers, and the whole family. These Sweet Potato Carrot Fritters are hands down one of our favorites because they’re soft, cheesy, flavorful, and incredibly easy for little ones to eat.

One thing I love most about these fritters is that they’re naturally packed with vegetables without feeling like “vegetable food.” The sweetness from the sweet potato and carrot pairs perfectly with the melted cheese, creating a delicious flavor that even my toddler happily enjoys. Ingredients

Adjust Servings
1 small or 1/2 large sweet potato
1 carrot
2 eggs
1/3 cup shredded cheese of choice
3 tbsp all purpose flour
olive oil for cooking

Directions

Peel and cut your carrot and sweet potato. Steam for 15 minutes until soft

Add to a bowl and mash the veggies

To a heated pan add a drizzle of olive oil and form your fritters, cooking each side for 3 minutes on medium heat, until golden

Notes

Storage instructions- in the refrigerator for up to 4 days. Reheat in the microwave, oven, or air fryer until warmed through.
Freezer- when cooled add to freezer safe bag for up to 2 months.
