Ingredients

1.5 lbs. boneless skinless chicken thighs
2 cups white rice
1 head of cilantro
1 full cup spinach leaves
1 onion
1.5 tsp salt
1 tsp turmeric
1/4 tsp black pepper
4 cups water
3 tbsp olive or avocado oil

Directions

Prep everything before hand for smoother cooking process. Clean chicken if needed, chop spinach and cilantro in a food processor, cut onion, wash rice.

In a large oven-safe pot, add oil, onion, turmeric, salt, pepper and sauté for 3 minutes

Add chicken thighs and sear on each side till you get a golden color

Add 4 cups of water, chopped spinach and cilantro and mix

Bring to a boil and cover on medium-high heat for 20 minutes

Add to oven on 375F for an additional 25 minutes or can cook stovetop for 25 minutes on low heat covered.
