Ingredients

Adjust Servings
1 lb. lean ground beef
3/4 cup sweet potato puree
1 egg
1/2 tsp turmeric
1/2 tsp cinnamon
1/2 tsp garlic powder
pinch of black pepper
pinch of salt (for 12 months & up)

Directions

Preheat oven to 375F

Cube and steam sweet potato for 15 minutes until soft and blend with a 2 tbsp of water

Add ground beef to mixing bowl, along with the sweet potato puree, egg, cinnamon, turmeric, garlic powder, black pepper and combine mixture well

Transfer the mixture to a parchment paper lined square baking dish and gently spread it into an even layer. I like to put indents going down and one big one in the middle

Bake for 30-35 minutes until fully cooked

Notes

Storage instructions- Store leftover meatloaf in an airtight container in the refrigerator for up to 3โ€“4 days.
Freezer- let cool completely, slice intro strips and store in freezer for up to 2 months.
Reheating- you can reheat in microwave, air fryer or oven on a low setting so it doesn't dry out.
