Kids’ Favorite Corn Frittata

🌽 Kids’ Favorite Corn Frittata

If your kids love corn, you are going to want to add this Kids’ Favorite Corn Frittata to your recipe rotation! It’s cheesy, fluffy, naturally sweet from the corn, and made with just a handful of simple ingredients. My kids absolutely love this one, and I love how easy it is to make.

This is one of those recipes that feels almost too simple to be a recipe, but sometimes those are the recipes my kids love the most. All you need is corn, eggs, cottage cheese, mozzarella, oats, baking powder, and a little salt. Everything gets mixed together in one bowl, baked until golden and set, and sliced into easy little pieces for the kids to enjoy.

I especially love this recipe for kids who already love corn because the sweet corn flavor really shines through. The mozzarella adds delicious cheesy flavor, while cottage cheese makes the frittata soft and fluffy and adds protein. The oats give it a little more substance, making these slices filling enough for breakfast, lunch, or snack time.

It’s also such a great recipe for little hands. You can cut it into strips for younger babies practicing baby-led weaning or into small bite-sized pieces for toddlers. My kids love being able to pick up the slices themselves, which makes mealtime a little more fun.
