If your little one is refusing salmon at the moment, I would definitely try it this way.

This recipe is simple and flexible, making it easy to adjust the ingredients:

  • White Rice: Any white rice works well in this recipe. You can use sushi rice, long grain rice (what I used), jasmine rice, or another white rice of choice. Just make sure the rice is cooked before mixing.
  • Salmon: Use fresh cooked salmon, baked salmon, air-fried salmon, or leftover salmon. Canned salmon can also work if preferred.
  • Shredded Cheese: Use mozzarella, cheddar, Monterey Jack, or another shredded cheese you enjoy. Mozzarella gives a softer texture while cheddar adds more flavor.
  • Egg: The egg helps bind everything together, but if needed, you can try substituting with 2โ€“3 tablespoons plain yogurt. The texture may be slightly softer.
  • Seasonings: Keep them plain or add garlic powder, onion powder, parsley, dill, or a little black pepper depending on preference and age.

Ingredients

Adjust Servings
1 slice salmon filet (around 3-4 oz.)
1 egg
1 cup cooked white rice (I used long-grain)
3/4 cup shredded cheese of choice
oil to spray for cooking

Directions

To start cook salmon filet however you'd like, you can air fry it, steam it, pan fry it, I cooked it in the oven for 15 minutes with a little olive oil on 400F
Mark as complete

To a medium size bowl add cooked, skinless salmon filet and mash
Mark as complete

Whisk an egg, add it in, along with cooked white rice, shredded cheese and combine everything together really well
Mark as complete

Scoop with tbsp and form balls with your hands, add it to a baking tray

Spray with a little oil and bake for 15 minutes on 375F

Slightly cool and serve!

Notes

Storage instructions- Store leftover cheesy salmon rice balls in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, oven, or air fryer until warmed through.
Freezer: freeze in freezer safe bag for up to 2 months, although I don't like to freeze these, I noticed they do taste fishier when frozen and reheated.
