If you’re short on time and happen to have some ground beef in the fridge, this deconstructed meatball rice bowl (with hidden veggies) is such an easy dinner to make for toddlers and the whole family. It’s warm, comforting, flavorful and best of all everything cooks in one pot.

On busy days, recipes like this are lifesavers. There’s minimal prep, minimal mess, and minimal cleanup, but you still end up with a wholesome meal that feels complete and nourishing.

The idea behind this recipe is simple: instead of shaping and cooking individual meatballs, you cook everything together in one pot with rice and vegetables. The result tastes very similar to classic meatballs and rice, but it’s much faster and easier to prepare.

Even better, it includes a couple of hidden vegetables that blend right into the dish so picky eaters don’t even notice them.

🥕 Hidden Veggies Kids Won’t Notice

This recipe includes vegetables that melt right into the dish, adding nutrition and flavor without changing the texture.

The two hidden veggies are:

  • Grated carrots

  • Grated tomatoes

Because they’re grated very finely, they completely cook down into the rice and meat. Kids usually can’t see or taste them at all, but they add natural sweetness, moisture, and nutrients to the meal.

This is one of my favorite tricks when cooking for toddlers.

👶 Perfect for Toddlers

This easy dinner for toddlers works because:

  • The texture is soft and easy to eat

  • The flavors are mild but flavorful and delicious at the same time

  • The vegetables are hidden and grated in

  • It provides protein, carbohydrates, and vegetables in one dish

I like to mash the beef with a potato masher, so it’s easier to eat for little ones.

🍽️ How to Serve

One of the best things about this recipe is that you can build your own bowls for the whole family.

For toddlers:

  • Serve the rice and beef mixture in a small bowl or divided plate

  • You can add a spoonful of plain yogurt or sour cream on the side if they enjoy dips

  • Pair with fresh cucumber slices, avocado, or steamed veggies

For older kids and adults:

  • Scoop the rice mixture into a bowl

  • Add sour cream on top

  • Sprinkle with shredded cheese

  • Add fresh herbs if you like

You can also serve it with a fresh side salad for adults to balance the meal.

🔄 Substitutions

This recipe is very flexible, so you can easily adjust the ingredients depending on what you have at home or what your family prefers.

Ground Beef
You can substitute the ground beef with:

  • Ground chicken

  • Ground turkey

  • Ground lamb

All of these work well and still create a flavorful dish.

White Rice
Instead of white rice, you can use:

  • Jasmine rice

  • Basmati rice

  • Brown rice (this will require a longer cooking time and a little more water)

Carrots
If you don’t have carrots, you can substitute with:

  • Finely grated zucchini

  • Finely grated sweet potato

Just make sure they are grated very finely so they blend into the dish the same way.

Tomatoes
Instead of grated fresh tomatoes, you can use:

  • Crushed tomatoes

  • Tomato sauce

  • A little extra tomato paste 

 

What You Need:

Cast Iron or Medium size pot

Grater

Potato Masher (This isn’t needed but I like to break up the ground beef with it, so it’s finer in texture for little ones).

Ingredients

Adjust Servings
1 lb. ground beef (lean)
2 cups white rice
1 onion
2 carrots
2 tomatoes
1 tsp salt
2 tsp paprika
1/4 tsp black pepper
2 tbsp tomato paste
1 1/2 cups filtered water
2 tbsp olive oil or avocado oil

Directions

Prep everything beforehand for smoother cooking- shred carrots (in small side of grater), grate tomatoes, chop onion
Mark as complete

In pot add oil, onion and sauté for 2-3 minutes until lightly browned

Add carrots, ground beef, seasoning (salt, paprika, pepper) and mix everything together while breaking up the beef on medium high heat. I use a potato masher to break up the beef finer so it's easier to eat

Add tomato paste and mix in

Add rice, water, mix, bring to a boil and cover on low heat for 25 minutes

Can add topping of choice like fresh salad, avocado, cucumber, sour cream, cheese, etc.

Notes

Storage instructions- Store any leftover Deconstructed Meatball Rice Bowls with Hidden Veggies in an airtight container in the refrigerator for up to 3–4 days.
To reheat, simply warm the meat mixture and rice in the microwave for 1–2 minutes, stirring halfway through until heated through. If the mixture seems a little dry, add a splash of water or broth before reheating to bring back moisture.
Freezer- freeze for up to 2 months.
