Homemade Strawberry Bars- A clean, no refined sugar, copycat Strawberry Nutrigrain Bar

There’s nothing better than a snack that feels like a treat but is actually made with wholesome ingredients. These Homemade Strawberry Bars are exactly that, a fun, sweet, yet nourishing recipe perfect for kids 12 months and up. My little ones absolutely love them, as do I with my afternoon coffee and I love knowing they’re made with real ingredients that I can trust. They’re soft enough for toddlers, filled with fruity goodness, and simple enough to whip up on a weekday afternoon.

They actually remind me of a healthier strawberry Nutri-Grain bar, only these are made with clean, simple ingredients and no refined sugar. The best part is how versatile they are and how well they keep. I’ve stored them in the fridge for a few days with no problem, and when I’ve had extras, I’ve frozen them. A quick thaw or reheat in the microwave makes them taste just as fresh and delicious as when they were first baked.

Unlike store-bought bars that are often filled with extra sugar and additives, these strawberry bars are made from scratch with pantry staples like oats, honey, butter, flour, and a touch of vanilla. The filling is as simple as adding your favorite jam, whether it’s my homemade strawberry chia jam or your go-to store-bought option. Ingredients

Adjust Servings
1 1/4 cups all-purpose flour
1/2 cup rolled oats
1 egg
4 tbsp cold butter
1/4 cup honey
1/2 tsp vanilla
1 tsp baking powder
strawberry jam (can be homemade or store-bought)

Directions

Add flour, oats, honey, butter, vanilla, egg, baking powder into a food processor and pulse until a dough forms

Chill the dough in the fridge for 20–30 minutes so it’s easier to work with. I like to wrap it in parchment paper. If you are making your own strawberry chia jam I recommend preparing it while the dough is chilling.

Roll out the dough between two sheets of parchment paper. Cut into squares around 2–2.5 inches for the perfect handheld bar size and flatten out each square into more of a rectangle

Spoon strawberry jam onto one side of the rectangle, make sure to leave some room on the edge so the jam doesn't spill out
If you made fresh strawberry jam, make sure it is cooled before adding

Fold the other side of the rectangle over and use a fork to press and seal the edges only on the ends

Place on baking tray with parchment paper and bake for 10-11 minutes on 350F

Notes

Storage Instructions Fridge: Store cooled bars in an airtight container in the refrigerator for up to 5 days. They hold up really well and stay soft and delicious.
Freezer: Place bars in a freezer-safe container or bag and freeze for up to 2 months. When ready to enjoy, simply thaw at room temperature for a few minutes or reheat gently in the microwave until warm.
On-the-Go: Pack into lunchboxes or snack bags straight from the fridge or freezer — they’ll thaw by the time your little one is ready to enjoy them.
