This recipe has become a regular in our home because it’s packed with flavor, made with wholesome ingredients, and comes together with very little effort. Best of all, it’s one of those meals where everyone can sit down and enjoy the same dinner, from babies and toddlers to older kids and adults. As a busy mom, those are my favorite kinds of recipes because there’s no need to make separate meals for little ones, plus they’re mini and we all know kids love a mini version of anything.

The shredded chicken is incredibly tender, juicy, and coated in a rich, flavorful sauce made with chicken broth, crushed tomatoes, and simple pantry spices. Once it’s tucked inside crispy mini tortillas with melted cheese, every bite is absolutely delicious. I love setting out everyone’s favorite toppings like sour cream, guacamole, salsa, and fresh avocado so everyone can customize their own tacos.

Ingredients

Adjust Servings
3-4 chicken breasts
1 cup chicken broth or water
1/2 cup crushed tomatoes
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp cumin
flour tortillas
shredded cheese of choice

Directions

Heat up olive oil on medium deep pan and sear chicken breast for 2-3 minutes on each side

Pour in the chicken broth and crushed tomatoes. Add the garlic powder, onion powder, paprika, cumin, salt, and pepper. Stir and once boiling reduce heat to medium, cover and cook for 20 minutes.

When ready remove the chicken from the pan and shred it using two forks. Return the shredded chicken to the skillet and stir it into the sauce until evenly coated

Using a round cookie cutter or the rim of a drinking glass, cut small circles out of the flour tortillas to make mini size tortillas

Place a small amount of shredded chicken on one half of each tortilla circle. Sprinkle with shredded cheese and fold the tortilla over. Spray a little oil and cook on a skillet over medium heat for 2–3 minutes per side, until golden, crispy, and the cheese has melted

Notes

Storage instructions- I recommend storing the shredded chicken alone for 4 days in the refrigerator.
Freezer- freeze cooked chicken for up to 2 months.
