Ingredients

8 oz. pasta (Use bowties, penne, spaghetti or fusili)
1 cup basil
1 cup parsley
1/3 cup pumpkin seeds
2 tsp lemon juice
1/4 cup olive oil
1/4 cup reserved pasta water
salt to your liking

1 garlic clove

Directions

Bring a pot of water to a boil and cook pasta till soft and tender. While pasta is cooking take out some pasta water and put to the side

Start making your pesto by adding all ingredients to a food processor or small blender- basil, parsley, pumpkin seeds, lemon juice, olive oil, salt, garlic if using , pasta water and blend till smooth.
Adjust pasta water and salt if needed

Freezer: You can freeze it, but the pasta texture may soften. If freezing, use short shapes like fusilli or shells and thaw gently before warming.
