Ingredients

Adjust Servings
1 medium size potato (I used gold potato)
4 broccoli florets
1 carrot
2 eggs
3 tbsp all-purpose flour or flour of choice
1/2 tsp garlic powder
1/2 tsp onion powder
avocado oil for lightly frying
Optional
salt to your liking (omit for younger babies)

Directions

Bring medium size pot with water to a boil and add broccoli, carrot, potato. Par-boil for 8 minutes, lightly covered
Keep the vegetables in big pieces so you can easily grate them. The carrot cut in half, potato in half or 4 pieces, the broccoli in one big floret.

Once softened, drain veggies well. Chop up broccoli, grate potato and carrot

To a mixing bowl add eggs and whisk

Heat up a little avocado oil on non-stick pan and begin to add the latkes. Cook each side for 3 minutes on medium heat, until crispy on the outside and golden brown

Notes

Storage instructions- These veggie latkes store beautifully, making them great for meal prep during busy holidays or everyday snacking: Refrigerator: Store cooked latkes in an airtight container for 3–4 days. Reheat in a skillet or air fryer for a few minutes to bring back the light crispiness. Freezer: Freeze latkes for up to 2 months.
Reheating instructions- can reheat a little in microwave or in air fryer/ toaster oven for a few minutes.
