It’s one of my favorite meals for busy weekdays because it comes together quickly using simple pantry staples, and adding a can of tuna instantly transforms classic mac and cheese into a satisfying, protein-packed meal.

Ingredients

Adjust Servings
1/2 box (8 oz.) of elbow macaroni
2 tbsp butter
2 tbsp flour (I used all-purpose)
1 1/2 cups whole milk
1 cup shredded cheddar cheese
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp turmeric (for color)
1 can of tuna (drained)

Directions

Boil your pasta- Bring a large pot of water to a boil and cook the elbow macaroni according to the package directions until ready and grate the cheese

While pasta is cooking place milk in a microwave-safe measuring cup or bowl and microwave for about 35 seconds

In a large saucepan or skillet, melt the butter over medium heat. Whisk in the flour and cook for about 30 seconds- 1 minute, whisking constantly, until a smooth paste forms

Slowly start to pour the warm milk to make the roux while whisking continuously. Continue whisking for about 3-4 minutes until the sauce has thickened on medium-high heat.

Once it has thickened remove the pan from the heat add salt, garlic powder, turmeric and stir in the shredded cheddar cheese until completely melted and smooth
If sauce if too thick you can add a splash of milk or pasta water

Drain tuna and mash in a seperate bowl before adding to the pot. Once done add the cooked pasta and tuna into the mac & cheese and stir everything together

Notes

Storage instructions- Store leftovers in an airtight container in the refrigerator for 3โ€“4 days. While you can freeze it, I don't recommend to. The cheese sauce can seperate and I noticed it can taste a little fishy from freezer.
Reheating instructions- Reheat in the microwave or on the stovetop with a splash of milk.
