Every year, I love creating a new little twist on chicken soup. It’s something I grew up on, my mom made a pot at least once a week and to this day it still feels like pure comfort to me. Now my kids are growing up with those same cozy bowls, and I like switching things up once in a while so it never feels boring and they continue to stay excited about it. This Chicken Meatball & Rice Soup is exactly that! What started as a simple idea turned into something so fun and unexpected, and once I saw those chicken-and-rice meatballs float to the top and saw how much my kids loved them I knew I had to share it with you.

It’s such a cool, playful twist on traditional chicken soup, and the soft, tender meatballs make it especially perfect for little ones. The best part is that it truly works for everyone, from 8-month-old babies to adults and it warms up the whole family in the coziest, most nostalgic way.

  • 8–10 months:
    Serve broth with very soft, small pieces of meatball. Smash the meatball lightly with your fingers or a fork. Offer soft veggies cut appropriately for baby-led feeding.

  • 10–12 months:
    Serve small broken pieces of meatball and soft veggies. Let baby practice scooping with a spoon this soup.

  • 12 months & up:
    Serve as-is with a small side of bread or toast for dipping. Add extra veggies or herbs for older toddlers and kids.

Ingredients

6-7 cups chicken broth
3/4 cup white rice
1-1.2 lbs. ground chicken breast
1 onion
2 carrots
2 celery
1/2 tsp turmeric
1/4 tsp black pepper
Optional
salt to your liking (for over 12 months old)

Directions

Begin by making your rice and chicken mixture, combine them both together well (add salt if using) cover and refrigerate for 15 minutes so its easier to work with

In the meantime begin to bring your broth to a boil, add seasonings, chopped onion, chopped celery, chopped carrots

Take out the rice and chicken and begin to form meatballs. Gently throw them into the boiling broth until you finish the rice and chicken mixture. Make them about 1 tbsp each or a little less if you want them smaller.
Don't touch the chicken and rice meatballs, they will start to rise to the top of the pot as they continue to cook

Cover on medium heat and cook for 35 minutes

Notes

Storage instructions- refrigerate in airtight container for up to 4 days. Freeze for up to 2 months.
Reheating instructions- best way to reheat is over the stove.
