Ingredients

Adjust Servings
1 cup frozen pineapple chunks
3-4 pitted medjool dates
1 tsp vanilla extract
1 cup + 3 tbsp oats (instant or rolled)
1 tbsp coconut oil
1-2 tbsp water
desiccated coconut shreds for rolling

Directions

Put everything in a food processor- frozen pineapple, dates, vanilla, oats, coconut oil, water and pulse for 30 seconds until you get a unified mixture
Start with 1 tbsp of water and if you need to add another one after 30 seconds of blending add 1 more.
Mark as complete

Roll into balls (mixture will be sticky) and coat with coconut shreds

Chill for 20 minutes until firm and serve!
