This Lentil Bolognese is one of those comforting meals that everyone in the family can sit down and enjoy together. Even better, it’s a wonderful recipe for picky eaters because the vegetables are blended before cooking, so they practically disappear into the sauce.

One of my favorite things about this recipe is how easy it is to sneak in extra vegetables for picky eaters. I always start by adding the celery, carrots, and garlic to a food processor until they’re finely chopped. As they sautรฉ and continue cooking with the lentils, they practically melt into the sauce. My kids don’t even notice they’re there, they just see a delicious bowl of pasta.

I also love that everything cooks together in one pot. After the vegetables are softened, the lentils, potatoes, broth, water, and pasta all simmer together into a thick, hearty meal that’s perfect for busy weeknights. It’s one of those recipes that tastes like it took hours to make, yet it’s made with simple pantry staples and very little hands-on work.

Even though this recipe is completely vegan, it’s incredibly satisfying thanks to the combination of lentils, potatoes, olive oil, and pasta. We usually finish our bowls with freshly grated Parmesan cheese (which technically makes it vegetarian), but you can easily leave it off or use your favorite dairy-free Parmesan to keep it fully vegan. Every bite is rich, comforting, and packed with flavor, the kind of meal everyone at the table happily eats.

  • Vegetable Broth: Chicken broth can be substituted if you don’t need the recipe to be vegan.
  • Potato: Yukon Gold or russet potatoes both work well.
  • Pasta: Any small pasta shape works, including ditalini, small shells, elbow macaroni, or orzo.
  • Celery: If you don’t have celery, simply add an extra carrot.

Ingredients

Adjust Servings
2/3 cup green lentils
1 carrot
1 celery
2 garlic cloves
1 medium size gold potato
4 cups chicken or vegetable broth
2 tbsp tomato paste
salt to your liking
1/4 tsp black pepper
2 cups water
8 oz. (half a box) small pasta of choice
1 tbsp olive oil for cooking

Directions

Soak lentils for 15 minutes and dice 1 potato

In the meantime add carrot, celery, garlic to small food processor and blitz

To a heated deep sautรฉ pan add olive oil, along with blitzed veggies, salt, pepper, and sautรฉ for a minute. After a minute add diced potatoes and washed lentils

Heat up broth, with 2 tbsp of tomato paste and mix it together. Season to your liking and add over lentils with veggies

Bring to a boil, cover on medium heat for 30 minutes until everything is cooked through

After 30 minutes add 2 cups of water, small pasta of choice and cover for an additional 10 minutes

Notes

Storage instructions- in an airtight container in the refrigerator for up to 4 days.
Freezer- freeze for up to 2 months. Thaw overnight in the refrigerator and reheat on the stovetop or in the microwave, adding a little water or broth as needed.
